Food items shall be received at the facility in the original, unopened, undamaged packaging and shall be properly protected from damage and potential contamination. Food shall be free from spoilage, filth, or other contamination and shall be safe for human consumption. The temperature of all potentially hazardous food shall be 45 F. or below or 140 F. or above at all times. Frozen food shall be kept frozen and should be stored at a temperature of 0 F. or below
