After reading an earlier comment about this childcare provider, I felt the need to explain and defend Ms. Mayra. I work with a segment of the Texas Dept. of Agriculture-Special Nutrition Services and our focus is on child nutrition. Serving Eggo's, frozen chicken nuggets and ham/cheese sandwiches mentioned are not nutritionally negligent. These items would only be part of the meal served which would include fruits, vegetables, low fat milk and enriched grain products. The guidelines about which foods are considered of enough nutritional content to be considered 'acceptable' are determined by the USDA. Concerns about foods served to the children in care should be communicated at the time a parent interviews a prospective child care provider. To expect a child care provider to cater to one parent's lofty expectations while all other children (and parents) are fine with the foods served is, in my opinion, more than a bit unrealistic. Of course, if the conviction about not serving the above listed foods is that strong,the burden of providing the desired meals could be shouldered by the parent. Semi-petty name spelling and payment policy issues listed in the former comment simply sound like a parent attempting to 'walk' on paying the agreed upon childcare fee. Hope other childcare providers in the area don't fall victim to this parent's extreme nutritional views and repercussive venting online. Heaven help her when her child starts school!
